Wash kidney well, cut in half, remove core and membrane.

Soak in cold water 1 hour. Drain and cut into small pieces. Combine with parsley, onions and salt and enough boiling water to cover. Cover and simmer 3 hours, adding more water if necessary. Thicken with a roux made from 1 tablespoon butter and 1 tablespoon flour if you want to. but this will add 26 calories per serving.
