Braised stuffed beef heart recipe

1 beef heart
½ cup chopped celery
2 tablespoons minced onion
2 tablespoons minced parsley
1 tablespoon melted butter
1 teaspoon poultry seasoning
Salt and pepper
2 tablespoons skim milk
2 cups sliced carrots
2 cups green beans
1 cup diced white turnips
Wipe heart with damp cloth and rub salt into the inside surface. Combine celery, onion, parsley, melted butter, poultry seasoning, salt, pepper and milk. Stuff heart with the mixture and close with skewers. Brown on all sides in a greased hot skillet. Make a bed of carrots, beans and turnips in a baking pan. Place heart in the center. Add sufficient boiling water to cover vegetables. Bake in 300° oven for 1 hour, basting frequently.
