I love to make pancakes but they usually come out of a box and are mixed with water. I was just over at Liz Rosenbaums blog and saw this easy and yummy recipe for whole wheat pancakes. Liz adds some more info at her site so check it out.
Whole Wheat Pancakes
1 1/4 cup whole wheat flour
2 1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 1/4 cup fat free milk
Combine ingredients in a medium sized bowl and mix together. Heat skillet to medium heat and spray with olive oil cooking spray. Pour onto skillet and flip pancake over when batter starts to bubble.
These are a nice and easy and healthy way to start a weekend morning in my house…and lots healthier now as well.

Meat loaf recipe
1 serving—318 calories
1 ½ pounds ground beef
½ cup soft bread crumbs
1 medium onion, minced
2 tablespoons chili sauce
¼ cup skim milk
Salt and pepper
½ teaspoon MSG
Mix all ingredients together thoroughly, but with a light touch. Pack into a loaf pan and bake in 375° oven for 1 hour.
Serves 4.
Very good cold, if you have any left over!

Flank steak pinwheels recipe
1 serving—354 calories
1 pound flank steak Salt and pepper
Have the butcher cut the steak, score it and roll it up so that the sinews run the length of the roll. He should then secure the roll with toothpicks about half an inch apart.
Next, have him slice the roll diagonally so that the slices are ¼-½ inch thick, each secured by toothpicks.
Season each slice with salt and pepper and broil, 4 inches from flame, about 5 minutes on each side.
Serves 4.

Broiled liver recipe
¼ pound—236 calories
Sprinkle one side of liver with salt and pepper. Broil close to high heat until brown on one side (2-3 minutes), turn, sprinkle with salt and pepper again and broil until second side is browned.
If you have never tried liver slightly rare, experiment by having your butcher cut it thick enough so that with quick cooking it cannot cook to a gray turn all the way through.
It will never be leathery if you teach yourself to like eating liver this way.

Braised Swiss steak recipe
1 serving—337 calories
1 pound lean round steak
(¾ inch thick)
Salt and pepper
1 tablespoon fat
1 No. 2 can sauerkraut, with juice
1 cup tomato juice
1 medium onion, sliced
1 teaspoon celery seed
Salt and pepper steak and sear it in melted fat over high heat. Reduce heat very low and add other ingredients. Cover and cook 1½ hours, or until steak is tender.

Braised stuffed beef heart recipe
1 serving—181 calories
1 beef heart
½ cup chopped celery
2 tablespoons minced onion
2 tablespoons minced parsley
1 tablespoon melted butter
1 teaspoon poultry seasoning
Salt and pepper
2 tablespoons skim milk
2 cups sliced carrots
2 cups green beans
1 cup diced white turnips
Wipe heart with damp cloth and rub salt into the inside surface. Combine celery, onion, parsley, melted butter, poultry seasoning, salt, pepper and milk. Stuff heart with the mixture and close with skewers. Brown on all sides in a greased hot skillet. Make a bed of carrots, beans and turnips in a baking pan. Place heart in the center. Add sufficient boiling water to cover vegetables. Bake in 300° oven for 1 hour, basting frequently.

1 tablespoon lard
2 slices bacon
1 medium onion
1 stalk celery
1 teaspoon chopped parsley
1 small carrot, chopped
2 tablespoons dried mushrooms
1 cup dry red wine
2 cups beef bouillon
Salt and pepper to taste
Soak mushrooms in cold water for 30 minutes. Chop bacon and vegetables fine.
Place in large pot with meat, lard and wine and cook until wine has evaporated and meat and vegetables are well browned. Add bouillon, cover tightly, simmer 2 hours or until meat is tender. Season.

2 quarts water
4 medium carrots, cut up
8 small onions
2 large stalks celery, cut in
2-inch pieces

Sprinkle meat with salt and pepper, and brown in melted fat over high heat. Reduce heat to very low, add water, cover and cook 1½ hours. Add carrots, onions, celery and sauerkraut and cook another ½-¾ of an hour, or until vegetables are tender.

Wash kidney well, cut in half, remove core and membrane.
Soak in cold water 1 hour. Drain and cut into small pieces. Combine with parsley, onions and salt and enough boiling water to cover. Cover and simmer 3 hours, adding more water if necessary. Thicken with a roux made from 1 tablespoon butter and 1 tablespoon flour if you want to. but this will add 26 calories per serving.

I have had a bit of a sweet tooth the last few days as I try to detox from all the Christmas junk. I have been doing pretty good. My wife found the following recipe for a type of cereal bar, I really like cereal bars so I was looking forward to trying this one out.
In the end I have been easily able to keep myself away from the chocolate and pop by having just a few morsels of this great cereal bar. The consistency of these things is really chewy like in the anme and they are really sweet. I really recommend them.
Shreddie Cereal Bar Snack
Prep: 10 min. I Total: 1 hour 10 min. incl. refrigerating
3/4 cup light corn syrup
3/4 cup Kraft Smooth Light Peanut Butter
3 cups Post Shreddies Cereal 1/2 cup chopped dried apricots
1/4 cup unsweetened flaked coconut 1/4 cup dried cranberries
1. SPRAY 8-inch square pan with cooking spray; set aside. Microwave corn syrup and peanut butter in large microwaveable bowl on HIGH 11/2 min. or until peanut butter is almost melted; stir until well blended.
2. ADD remaining ingredients; mix well. Press into prepared pan.
3. REFRIGERATE 1 hour or until firm. Makes 20 servings, 1 bar each.
