My wife has been surfing around looking for some better choices for kids lunches. Our daughter starts grade three and our son starts kindergarten in just a couple of days so this seemed to be a good time to start getting serious about lunchbox contents.

I have had a bit of a sweet tooth the last few days as I try to detox from all the Christmas junk. I have been doing pretty good. My wife found the following recipe for a type of cereal bar, I really like cereal bars so I was looking forward to trying this one out.

In the end I have been easily able to keep myself away from the chocolate and pop by having just a few morsels of this great cereal bar. The consistency of these things is really chewy like in the anme and they are really sweet. I really recommend them.

Shreddie Cereal Bar Snack

Prep: 10 min. I Total: 1 hour 10 min. incl. refrigerating

3/4 cup light corn syrup
3/4 cup Kraft Smooth Light Peanut Butter
3 cups Post Shreddies Cereal 1/2 cup chopped dried apricots
1/4 cup unsweetened flaked coconut 1/4 cup dried cranberries

1. SPRAY 8-inch square pan with cooking spray; set aside. Microwave corn syrup and peanut butter in large microwaveable bowl on HIGH 11/2 min. or until peanut butter is almost melted; stir until well blended.

2. ADD remaining ingredients; mix well. Press into prepared pan.

3. REFRIGERATE 1 hour or until firm. Makes 20 servings, 1 bar each.

We had this for dinner a couple of nights ago. My wife hates to eat any kind of greasy meat so we are always looking for more low fat recipes then just having chicken or turkey chicken. This recipe, which is modified from another one that my wife found in a book was fantastic with lots of taste and a really smooth texture, moist and not dry at all. The recipe takes advantage f our crockpot which is nice but I get hungry just smelling the food around the house all day.

Originally this was a sandwich recipe but we had it over rice instead.

Prep: 10 min. Total: 7 hours 10 min.

1 cup Kraft Original barbecue Sauce
1/4 cup Kraft Pure Orange Marmalade
1 boneless pork loin

MIX barbecue sauce and marmalade. Place meat in slow cooker; top with barbecue sauce mixture. Cover with lid.

COOK on LOW for 8 to 10 hours (or on HIGH for 4 to 6 hours].

Remove meat from slow cooker; cut into small pieces or shred with fork. Return meat to slow cooker; stir until meat is evenly coated with the barbecue sauce mixture.

SUBSTITUTE: Switch up the flavor by using Bull’s-Eye BBO Sauce instead of the Kraft Original BarBO Sauce.
