I love to make pancakes but they usually come out of  a box and are mixed with water. I was just over at Liz Rosenbaums blog and saw this easy and yummy recipe for whole wheat pancakes. Liz adds some more info at her site so check it out.

Whole Wheat Pancakes

1 1/4 cup whole wheat flour
2 1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 1/4 cup fat free milk

Combine ingredients in a medium sized bowl and mix together. Heat skillet to medium heat and spray with olive oil cooking spray. Pour onto skillet and flip pancake over when batter starts to bubble.

These are a nice and easy and healthy way to start a weekend morning in my house…and lots healthier now as well.
