My wife has been making these great mini loaves or muffins with All Bran and thought I should share the recipe:

Ingredients:
3 cups of All Bran
2 and a half cups of warm water
1 box of Betty Crocker low fat brownie mix
1 and a half teaspoons of baking powder

Directions
Mix the water and the All Bran together and let it sit for about two minutes.
Add the Betty Crocker low fat brownie mix, and baking soda
Mix, mix, mix

Spray mini loaf or cupcake tins with some Pam and bake in the oven
Bake at 350 degrees for 20-25 minutes and then let cool

Recipe will make 24 Weight Watchers one point muffins or 8 Weight Watchers three point mini loaves.

      Your recipe calls for BAKING POWDER, yet the directions say to mix BAKING SODA. Which one is it, or both??

      I checked with my wife and it is indeed BAKING POWDER. I know she made them again last week and they taste good so it must be right.

      I did the math on these muffins and it works out to 2 points for each muffin? I totaled the all bran and the fudge brownie mix I did use the all bran buds so that may be different from the other all bran do you know?

      I have made these and they are fantastic, to make them even better your can add one teaspoon of fruit spred: raspberry, blueberry or strawberry as well as l slice of bananna, but add an extra 1/2 point so for 1 1/2 points you have a delicious, healthy muffin.

      I have made these muffins and they are very good but they do make 18 – 2 point muffins if you do the math and use a weight watchers point calculator, with regular all bran cereal

      I experienced a little with this recipe and found if you use Betty crocker chocolate fudge cake mix, 510g plus 2 egg whites instead of the baking powder , bake at 350 degress for 18 mins. you get 24 great muffins, not sure the difference in points, maybe someone can do the math.
